Leftovers to Lunch! 10 Great Ideas to Take Your Dinner Leftovers to a New Level!



My favorite lunch is leftovers. I just love how easy it is and I'm not wasting a thing! Sometimes leftovers need a little sprucing to make a good lunch. Here are some ideas!

1. Throw it in an omelet. Good for meat and veggies.

2. Eat it on bread! I had some paprika chicken sauce but no cooked noodles. I just ate it on a slice of bread instead for an easy lunch.



3. Burrito time! Wrap up everything in a tortilla and call it good.

4. Soup. Oh how I love soup for lunch! You can use meat, vegetables, beans and pasta in soup and they taste amazing. I love to experiment with soup and throw different vegetables in. I don't recommend eggplant though.

5. Sandwich, the old stand-by. Take it up a notch by turning it into a grilled cheese! Don't forget to add vegetables like asparagus, onions, and peppers you cooked up last night. A lettuce wrap is a way to use your leftovers as a sandwich without eating a ton of carbs.

6. Eat it cold. I'm looking at you, pizza. And I will also eat spaghetti cold too, on occasion.

7. Bake it. Leftover spaghetti? Why not bake it? Recipe here

8.  Why not make a pizza? French bread pizza is so fun and easy, lunch comes together in minutes when you have left over meat and vegetables. Or a pizza bagel!

9.  Eat it over rice. I ran out of tortillas the last time I made chili verde pork. I couldn't let it go to waste so I ate it over rice. Delish! Or use your leftover to top a baked potato.

10.  4. Toss with lettuce to make a salad. One of my favorites, good for meat, veggies and even rice like I did with my left over fish tacos and rice:

Low Calorie Wrap

I LOVE this wrap. It's super yummy and quick to make. AND it's only around 200 calories! Yes, 200 calories people.
Ingredients:
Flour Tortilla
Lite Ranch Dressing
Feta
Turkey
Lettuce


Starting with a flour tortilla (120 calories) add some lite ranch dressing (half a serving is 40 calories and plenty of dressing). Spread that around.
In the center of the tortilla, add some feta. A full serving is 80 calories and is a tablespoon; I halved that since feta is a strong flavor and it was just enough.
Next, layer on some turkey (30 calories) or other lunch meat like roast beef or ham which are both yummy in this wrap, too.
On top of that, add some lettuce (2 calories...if that!)

Now roll it up and enjoy your delicious wrap!

Easy school lunch planner (free download!)

We're heading back to school soon here, so I'm revamping our routines and chore charts to try to get us off on the right foot. My oldest will be entering first grade, and will have to bring his lunches for the first time.

He's very excited. Me? A little less so. Because I'll be the one doing all the making and packing. However, I think I've found a way that my six-year-old can help with making his lunch, and end up with something he wants to eat: an easy school lunch planner!


We sat down together and brainstormed some ideas for things to put in his lunch. I came up with the basic categories (main dish, fruit/vegetable, side, drink and dessert) and we listed several ideas in each. Next, I typed the foods and categories up and color coded them.

Next, I want to laminate and cut out the category cards and the food slips. The category cards could go on the front of organizing boxes, or they could go above hooks, and the food slips could be strung on metal rings to hang on the hooks.

The Ready? category is for the final check of questions: do you need a spoon or fork? Do you have your water bottle, sandwich and lunch box? There is also a Shopping category to use the food slips as a reminder to stock up.

This way, you get your kids involved in picking and maybe even packing (and hopefully eating!) their own lunches.
